Obituary of Elizabeth Olive Rodriguez

Elizabeth "Beth" Olive Rodriguez, 84, passed away on December 28, 2022 in Colorado Springs, Colorado. 

She was born on April 5, 1938 in Yerington, Nevada to Edward Leslie and Rose Olive (Donaldson) Scott.

Beth earned a GED, and a cooking school certificate. She worked in the Restaurant industry, as a Receptionist and Mailroom Supervisor. She was mostly known as a wife, mother, grandmother, and friend. She will always be remembered as the sweet lady who gave smiles, hugs, handmade knitted hats, and love everywhere she went. She loved her Lord Jesus and reflected His love to everyone she met. 

Mom (Grandma Beth) is survived by her daughter, Sandra (Dwight) Dee Ellis Grant; her sons, Stephen Thomas Ellis, David Jonathan Ellis, Matthew Tee Ellis, and Mark Edward Ellis; her three stepchildren; her sister, Billie Linda Walker;  sixteen grandchildren; twenty-nine great-grandchildren; six step-grandchildren; eleven step-great-grandchildren; and three step-great-great-grandchildren.

She was preceded in death by her first husband, Thomas Edward Ellis; her second husband, Michael Anthony Rodriguez; her daughter, Pamela Louise Ellis; and her parents, Edward Leslie and Rose Olive Scott. 

In lieu of flowers, memorial contributions may be made to Seeds Wilderness Therapy, a Christian Ministry that Beth loved and supported that seeks to rescue struggling teenagers and help them make good choices in life. The family wishes to extend their gratitude to Pikes Peak Care Center and Pikes Peak Hospice for her end-of-life care. They also would like to extend their gratitude to the members of Central Christian Church in Wichita, Kansas, her many lifelong friends, and her friends at Front Range Alliance Church for their love and care in Beth’s final years in Colorado Springs.
